Lizzy, I'm sorry it wasn't more clear. The beauty of the method is this: I don't wash jars! Once I finish the kefir in one jug, I transfer the grains to a new jug and start all over. The used jug gets hosed out and sent off to recycling.
Probably about a tablespoon to that shy quart of milk. Lots of room for wiggle, however. One of the things I love about it.
